1) HB1 pickups will fit.
2) No, you don't "need" to change the pots to 500k.
3) Many people do, in order to get a marginal, and I mean the thinnest of marginal tweak to the top end, due to the 500k pot having marginally less loading to ground.
4) Generally, all else being the same, the more wire, the more inductance, which lowers the resonant peak of the pickup, which our ears perceive as more mids.
5) Also generally, the more wire, the more intra-coil capacitance, which our ears hear as less top end.
6) Conclusion: an HB-1 will by its nature never have the jangle of a toaster or the brightness of a High-gain. For that reason, many folks use switching arrangements for either parallel coils, which quarters the impedance of the pickup compared to full series wiring, which our ears perceive as a drop in mids, or increase in clarity; or split to single coil, which again, using only one coil, or half of the pickup, also results in less inductance and less intra-coil capacitance, but then by definition, less output as well, and no humbucking.
